We’re a bit under the weather around here so I decided to whip up some energy bites for a fast snack and as something to combine with veggies and dip for lunch. There are lots of recipes out there for regular energy bites, but I wanted something with a little kick. I looked in the pantry and had an epiphany. Why not substitute my favorite Chai spice oatmeal for the regular oats called for in the recipe? Well, tried it – and it was delicious.
A grown up version of the energy bites, but still mild enough that they were gobbled up before we put them into balls by Olivia.
How do you do it? Combine –
2 pkgs Organic Sally Chai Spice Oatmeal
You can find it at Walmart, in the oatmeal aisle ($1.59/5)
1/3 c. honey
1/3 cup dark chocolate flakes
I had some pretentious Williams Sonoma Chocolate flakes on hand, but you could use mini chocolate chips
1/3 c. peanut butter
2/3 c. coconut flakes
1/2 c. ground flaxseed
Costco has the best price
Combine all of the ingredients together in a bowl and smooth it together. Cover and refrigerate for twenty to thirty minutes, remove from the fridge and shape into balls. You can freeze these.
Yeilds about twenty energy bites.
