You’ve heard it before – but when I do lunch, I want it fast. For those quick lunches when I want to make something hearty, I always have a package of our favorite refrigerated pasta ready to go. It’s perfect for baked mac and cheese and is always a hit around here.
Every last bite gets eaten.
Tortellini + Broccoli Mac & Cheese
refrigerated tortellini 1 package
chopped broccoli 1 cup
shredded cheese 1 cup
milk 1/4 cup
butter 2 tbs
fresh ground pepper
panko breadcrumbs to top
Boil the water and cook the broccoli with the refrigerated pasta. Strain and put back into pot. Mix in the butter, milk and half of the cheese. Stir to melt. Then, place in a loaf pan. I find that one loaf pan is the perfect size for one package of pasta and broccoli.
Top the mac and cheese recipe with the rest of the cheese and sprinkle panko crumbs on top. Bake at 425 degrees for five minutes and Broil for 2-3 minutes. Watch it carefully when you switch to broil, it crisps up quick.
Delicious and fast, that’s my kind of mac and cheese.
