Jamie works pretty close to our house, so there are some times when he doesn’t wake up early enough to make lunch, or hasn’t the night before that he will come home for lunch. Even though he is usually only there long enough to eat and have a quick chat before heading back to work. The girls love it.
Today was one of those days. It was also one of those days when I didn’t really feel like cooking anything extravagant. And everyone knows that when you don’t feel like cooking anything extravagant, grilled cheese it is. However, he’s not a huge fan of grilled cheese, by itself. He much prefers a little more substance.
These are one of my favorite things to make, because it’s easy – though it does take a bit of prep work cooking the eggs and bacon. Once that’s finished it’s a snap to make.
Grilled Two Cheese Breakfast Sandwiches
1-2 slices of bacon per sandwich
eggs, milk, to make scrambled eggs
First, start cooking the bacon. While the bacon is cooking begin to prepare the scrambled eggs. For the scrambled eggs today I used light sour cream, eggs, some cheese bacon chives epicure dip mix we had in the pantry, cheese and a splash of water at the end before I whisked them.
Once the eggs and bacon are cooked, set aside.
Butter the bread and slice the bacon in halves so they easily fit on the sandwich.
When it’s time to cook the sandwich, start cooking it as you would a grilled cheese and layer the sliced cheese, eggs, bacon and grated cheese on to the bread. Top it off with the second slice and cook on medium to melt everything inside.
You might never want regular grilled cheese again.
