Making these oatmeal pucks has completely replaced the packages that we used to buy from Costco. Once a week I’ll spend fifteen minutes making a batch of oatmeal, putting it into muffin tins and freezing them. When the portions are frozen, I will pop them out of the tin and label a Ziploc bag with the flavor, creating an easy breakfast (or afternoon snack) that can be thawed and cooked by popping it into the microwave for 90 seconds with a bit of milk.
Easy Home Made Oatmeal Recipe
3 1/2 cups milk
4 tbs brown sugar
1 tsp vanilla extract
1/4 tsp salt
3 cups quick oat (you could use rolled oats, it would just take longer than 2-3 minutes to cook)
Heat the milk, brown sugar, vanilla and salt. When it’s hot, add the quick oats and stir to your desired oatmeal consistency. Don’t let it col and scoop a heaping 1/4 cup into each of the muffin tins.
Here’s where the fun comes in, you can easily customize the flavor of the oatmeal before you freeze. For this batch I added sunflower seeds, blueberries and honey. For a more decadent version, you could try the cinnamon roll freezer oatmeal recipe that I shared last week.
