What do you get when you combine a morning kindergarten schedule with parents and kids that are not morning people? You get a mom that’s going to search for easy, and wholesome recipes that are going to be easily eaten while everyone is running around the house, grabbing clothes and getting ready for the day.
Pancake muffins are better than pancakes because you can eat them without a fork, and the maple syrup that usually tops the pancakes is baked right into the top of the muffin with the fruit (or chocolate chips, depending on preference) to make it simple to grab a muffin and go.
Easily refrigerated, or frozen, all you have to do reheat these muffins in the microwave.
Simple Pancake Recipe
1 cup flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons unsalted butter
1 large egg
1 tablespoon oil (vegetable, coconut etc.)
Whisk together the flour, sugar, baking powder and salt. Set aside.
In a second bowl, mix together the milk, butter and oil with the egg.
Add the dry ingredients to the mix and stir until just combined.
In a muffin tray, put about 4 tablespoons of batter into each muffin. Top with blueberries, chocolate chips, or other fruit and drizzle with a bit of maple syrup.
Bake for 18-20 minutes at 350 degrees.
