Iced Chai lattes are one of my favorite things about summer. Cool and delicious, it’s the perfect way to celebrate on a sunny afternoon. With some Chai Latte Concentrate and a bit of homemade whipped cream, you can have the most perfect popsicles that are the perfect ice texture on the top and some creamy delicious whipping cream on the bottom of the popsicle.
Tazo Chai Latte Ice Pops
Chai Tea Concentrate
1/2 cup cream
1/2 tbsp sugar
1/4 tsp vanilla extract
1. Prepare the whipped cream in a stand mixer or with a hand mixer by combining the whipping cream, vanilla extract and sugar. When stiff peaks have formed, set aside and get out your favorite popsicle molds. We found these ones at Superstore, for $6 and they’re similar to the higher priced Tovolo molds. I love the fact that there is a stand that comes in handy when you’re filling the popsicle and the fact that they’re a generous size (almost too generous for small kids) but the covers make it simple to pop them back in the freezer for the next ice pop craving.
2. Fill the popsicle mold half way with the chai tea concentrate and finish it off with the whipped cream using a rubber spatula to slowly fill the popsicle mold.
tip: I buy the Chai concentrate at Costco on sale when it’s $8/3L (the best price I’ve found)
3. Tip: to make these ice pops quicker you can use cool whip or prepared whip cream at the bottom of the chai latte ice pops.
Freeze for four to six hours, or overnight, and run hot water over the ice pop mold to help to unmold the popsicle.
