I’ve got a pocket full of rocks and flower tops that were covertly picked from a neighboring garden on our way home from the park. Turns out, I wasn’t the only one with rocks and flowers in my pocket, there’s a nice pile at the front door. They’ve strategically scattered the rocks around the house so I step on them from time to time, not expecting the pain of a sharp rock in my heel.
Not even five minutes in the door from spending almost two hours at the park, I steal away for a few moments to answer a couple of emails and come back to a bowl filled with feathers on the couch, and a trail of feathers from the living room to the kitchen. There’s even a fancy feather. Olivia is slowly picking the feathers out of the down pillow and filling up a bowl – obviously just to mess with me.
The words “Why are you naked?” came out of my mouth no fewer than seventeen times today. New rule – I don’t care if the kids are naked in the backyard – as long as they’re not naked in the front yard. That’s going to save me seventeen questions, daily.
These three factors meant that I needed something quick for lunch, something that was going to be simple – but that stepped it up a notch from a couple of baked pitas with vegetables and tzatziki sauce that would usually provide a simple picnic for the kids. On this crazy work-catch-up, Dad’s coming home for lunch kind of day it called for Chipotle Chicken Wraps.
Easiest Chipotle Chicken Wraps
1 cup mayo
3 tbs bbq sauce
juice from 1/2 lime
1/4 tsp paprika
1/2 tsp garlic powder
salt and pepper
Mix together the ingredients for the sauce, grill two chicken breasts on the BBQ and wash and chop some lettuce. Wrap with shredded cheese and you’ve got a simple lunch that’s perfect those times you’re sanity is being held hostage by those tiny terrorists.
