Since receiving the KitchenAid ice cream maker as a gift from my lovely aunt, we have tried many, many recipes for ice cream. This is one of the kids’ favorites and while testing the recipe a couple of months ago, they gobbled up the ice cream, quickly asking for more. Since then, we’ve made it many, many times as it’s one of their favorite flavors.
Oreo Ice Cream
3 egg yolks
1 can sweetened condensed milk
4 tsp vanilla
2 cups heavy cream
1/2 cup sugar
pinch of salt
Combine the sweetened condensed milk, sugar, vanilla, sugar, salt and heavy cream on the stove over medium heat. Whisk egg yolks in separate bowl for one minute, until fluffy. Add heated mixture to egg yolks, whisk together slowly and put back over medium heat, whisking the mixture for five minutes. Cook the custard until it’s thickened over medium heat do not boil. Let the mixture cool completely before putting it into the ice cream maker.
Using the KitchenAid ice cream maker attachment, we churned the mixture for twenty minutes. During the last three minutes, I added in one cup of chopped oreos. Serve immediately for soft serve consistency, or let freeze for 24 hours for the flavors to develop more.
Recipe makes about 1L of ice cream. You can store in the freezer for up to three weeks, covered.
