Recently, I discovered delicious pretzel buns at our local Save on Foods and I’ve been searching for a delicious grilled chicken recipe to pair with them. Barbecue chicken burgers are a staple around here, so I did a bit of research and a few simple ingredients to create a bit of new grilling flavour.
Tip: brine the chicken (3 boneless skinless breasts) before grilling to lock in that moisture. Combine one cup of boiling water with 1/4 cup of kosher salt and a 1/4 cup of sugar and let sit for 30 minutes. I sliced the chicken into thinner breasts, before placing it in the brine.
Cilantro Lime BBQ Chicken Burgers on a Pretzel Bun
1 cup BBQ Sauce (your favorite blend)
2 tbs fresh cilantro
1 tsp lime zest
1 tbs fresh lime juice
3 chicken breasts, sliced thinly for easy grilling.
1 Mix the ingredients for the barbecue sauce together and put the chicken breasts into a ziploc bag covered with the sauce.
2 Grill on medium for ten to twelve minutes until finished. Reserve a bit of sauce from the original to add to the chicken when it’s finished grilling.
3 Serve with bacon, cheese, greens really it’s your choice of toppings on a soft and delicious pretzel bun. To add a bit more, you can also make a flavored mayo, whether you want to use more barbecue flavor, some lime or cilantro added in.
