A few months ago I bought the on-sale couscous mix from Costco, and we’ve been using it a few times a month – but I wanted to use it up before we start buying more grains, or opening another package of ‘something different’ for a dinner side dish. I’ve always served it with vegetables or in a warm or cold salad, but today I decided that we should a simple recipe for mac couscous and cheese. It took a little coaxing, because it was something new, and we’ve got a five year old who needs the coaxing. It was a well received lunch with chicken strips I made and froze last weekend, and was so simple that it’s quite possible it’s going to make it into our dinner rotation.
Couscous n’ Cheese
2 tablespoons butter
1 clove of garlic
fresh nutmeg shavings
3/4 – 1 cup parmesan cheese
1 3/4 cups cousous (or your favorite couscous blend)
1 1/4 cups water
1/3 cup cream
fresh ground pepper, a bit more nutmeg
(you could also add some paprika, or cajun spice for some fiery flavour)
Melt two tablespoons of butter, with a bit of nutmeg shaved and chopped garlic, until garlic softens.
Add dry couscous and water, cover and cook on med/high for ten minutes, stirring occasionally.
After the couscous has cooked, add 1/2 cup of cream, pepper, and another sprinkle of nutmeg (go to the bulk barn and buy fresh nutmeg, the pasta will thank you!)
Turn the heat to low, add cheese and serve.
