Mini Nilla Wafer ‘Ice Cream’ Sandwiches | Frugal Five Minute Recipe

One of the things that I’ve stopped buying is cool whip and whipped cream. First, they’re double the price of buying a small carton of whipping cream (250ml) and the ingredients kind of make me shudder. When we were making whipped cream for waffles today, we had quite a bit left over. I was going to make ice box cupcakes, but Olivia was ranting about ice cream, so we opted on ice-cream sandwiches.

Make Whipped Cream at-Home

1 carton Whipping Cream (250ml)
1 tbs confectioners sugar
1 tsp pure vanilla extract

Whip for about five minutes, then add in the vanilla and sugar. Whip again to incorperate (Save time and use a mixer) - and voila. You can store it in the fridge/freezer for use later that day.

To make the ‘ice cream’ sandwiches I used Nilla wafers and about 1 tbs of whipped cream inside. I added sprinkles around the edges and placed them in the freezer to harden and enjoy after lunch. I can’t wait to make these for summer playdates!
