Easy No Bake Toasted Coconut Energy Bars

Toasted Coconut Energy BarsThis weekend marks the weekend that we’re taking the girls on their first hike, as we spend the weekend in Canmore. Olivia is beyond excited to see the falls, and though I anticipate we’re going to have to carry Violet up the hike for the hard parts, it’s going to be a fun experience that Olivia has been talking about all week.

Whether you are heading out for the weekend and want to bring along healthy and inexpensive options, of you are searching for snacks that are going to fuel the kids on the go all summer long, these energy bars are some of our favorite and they are simple to make in the food processor.

No Bake Toasted Coconut Energy Bars

15 Medjool Dates
1/2 cup almonds
1/2 cup cashews
1 cup toasted coconut
2 tablespoons coconut oil
2 tablespoons water

Mix the almonds, toasted coconut and cashews in the food processor until fine.

Add the dates, oil and water and pulse into a dough ball.

Form the ball into a log, wrap and refrigerate.

Cut into circular bars.
