The first time I attempted to make fudge I waded through at least thirty recipes that called for more steps than I care to try and many of them required corn syrup, something that I didn’t have on hand. Other recipes were filled with comments about first-time fudge makers not seeing fudge that ‘set’. Needless to say it’s one of the more nervous recipes I’ve attempted.
Until I found a version of five minute fudge that used ingredients I had on hand - and great reviews and comments to go along with it.
Five Minute Fudge, via Southern Food
- 2 tbs butter
- 2/3 c evaporated milk
- 1 2/3 c sugar
- 1/2 tsp salt
- 2 cups marshmallows
- 1 1/2 c chocolate chips
- 1 tsp vanilla extract
Nuts and toppings are optional
- Combine the butter, sugar and milk and salt in a sauce pan and melt over medium heat
- Bring to a boil and cook for 4-5 minutes stir it constantly
- Remove from heat and stir in marshmallows and chocolate, vanilla extract and stir quickly to incorperate
- Beat for about 60 seconds to mix it thoroughly
- Place in 8″ square pan
- Top with toppings
- Cool for 90 minutes in refrigerated and cut into squares
Viola! Fudge that set and on the first time. I topped it with Valentine’s Day sprinkles that we had leftover from our Heart Dipped Pretzel sticks and wrapped and stuck it in the freezer for a snack closer to Valentine’s Day or to serve at our Valentine’s Day Playdate.
