Tortellini is one of the staples around here when it comes to lunchtime. Made within seven minutes and paired with healthy veggies and fruits for lunch-time fare, it makes for a quick and easy lunch that I can throw together.

Plus, it’s so versatile that you can make a quick carbonara sauce to toss with the hot pasta, warm salads or pair it with the traditional tomato sauce (that doesn’t happen too often around here as we have adventurous kiddos that enjoy new flavors).

Today, I wanted to share this warm Greek pasta salad that you can get together in ten minutes and serve with veggies, or blackberries, today’s choice of side for the kiddo - and snack on it yourself, because it’s that good.

You are going to need:

Clubhouse Greek One Step Seasoning
a few generous shakes
One Refrigerated Package of Tortellini
2 tsp Olive Oil
2 tsp Parmesan Cheese (fresh or dried)
Handful of Cherry Tomatoes, choppsed
Optional: Olives, feta and cucumbers, chopped

Today, we did it plain with tomatoes based on preferences that change from day to day. Cook the tortellini according to the package and while it’s cooking add chopped veggies, olive oil, spices and parmesan cheese to the bowl.

Add in cooked tortellini, toss and serve warm.
