10 Easy and Delicious One Pot Recipes You Need to Try

One pot recipes save our life during the winter months, when we’ve got swimming lessons in the evening, busy days, and early bedtimes. One pot recipes make me look at dinner with less of a scared look on my face, wondering how quickly I can get something on the table from the ingredients we’ve got in the refrigerator and in the pantry.

They’re also something that I’ve avoided in the past. My mom made some horrendous one pot meals as a kid - and I don’t want the girls to have the same memories. Don’t worry, she knows how I feel about her ‘goulash’.

I wanted to share some of our favorite one pot meals to get you through the fall months, to warm up bellies during those cold winter days and have leftovers perfect for filling thermoses for lunch the next day.

One pot Spicy Thai Noodles
Our suggestion: change up the linguine for rice noodles or something similar, it’s going to be quicker and you’re going to have a bit more of an authentic dish. Am I the only one that has a thing about thai dishes using pasta noodles!?

One Pot Lasagna
You’ve got to try this delicious pasta meal. Put a loaf of your favourite crusty bread on the table and serve with some whipped butter and herbs and you’ve got a delicious dish. Plus, it’s easy. Like really, really easy.

One Pot Spinach and Gnocchi
Easy to create with rotisserie chicken, this is one of those go-to dishes that you can create with ingredients from the pantry and the refrigerator, and have leftovers for lunch. It’s better the next day. Change it up with a different flavour of rotisserie chicken, like the spicy ones.

One Pot Garlic Parmesan Pasta
Delicious, yummy, oh my god, this is a delicious kid-pleasing meal that’s going to be easy enough to make, especially if you’ve got chicken already cooked in the refrigerator to add into the recipe.

Parmesan Garlic Risotto and Lemon Chicken
This one is a delicious chicken meal to change up the regular pasta and chicken that come with the popular one pot meals.

One Pot Mexican Quinoa
This is one of the easiest ways that we use up Quinoa, and one of the only ways that the kids like it prepared. If you cook the quinoa ahead of time and have it in the fridge it really gets it on the table faster. Serve it with chips, you’ll be the rockstar Mom.

Cheeseburger Gnocchi
All the goodness of cheeseburgers and comforting gnocchi, in an easy one pot dish. You’re going to want to try this one out for fussy eaters.

One Pot Chicken Burrito Bowls
Look at the colors in this one. Easily served with tortillas or taco chips, this is an easy one pot dinner that’s kid friendly and packed full of flavour (and also makes a ton of leftovers).

One Pot Bacon, Egg and Potato Skillet
Breakfast for dinner? That’s easy when you’ve got an easy recipe like this one. We like to make a quick fruit salad to use up the leftover fruit in the fridge before it’s time to go for groceries, and serve this up for an easy breakfast favourite.

Chicken Noodle Casserole
If you’ve got little kids that want the comfort of chicken noodle soup, with broth that usually goes to waste, this chicken noodle casserole is a fabulous idea. Prepare the noodles ahead of time to make this easy meal into a one pot dish. We keep cooked noodles in the fridge for 1-2 days to make for easy lunches and dinners - try it, it make dinner easier.
