Afternoon Pick-Me-Up: Dark Chocolate Coconut Energy Bites

These chocolate-coconut energy bites are that delicious hint of sweet that you need sometimes, to get past three-o’clock, and they’re a better option than the handful of chocolate covered raisins that I usually reach for when I need that little pick me up.

Dark Chocolate Coconut Energy Bites

1 cup quinoa flakes
1/2 cup dark chocolate mini chips
2/3 cup coconut flakes
1 tbs coconut oil
1/2 cup almond butter + 2 tbs cocoa combined
1/3 cup pure maple syrup
optional: 1-2 tbs cocoa powder, 1 tbs maple syrup to get make mix stick together.

Combine all ingredients together, and use a scoop to place into balls, or roll into balls. Freeze in a container for a delicious, sweet, energy bite, when you need that little afternoon pick-me-up.

These are an easy snack, and though they do contain pure maple syrup and cocoa, they’re a better option than the snacks that I would usually go for mid-afternoon.

Delicious, and worth a try, they’re full of chocolate flavour and a hint of crunch that comes from the combination of quinoa and coconut flakes.
