Make These: No-Bake, S’more Bar Crunch Squares

Back to school snacks are upon us, and we’ve been doing meal prep like crazy, to get through not only the back to school season, but the fact that we’re going to be adding a new person to our family, and dealing with little sleep. For back to school snacks, the kids have been coveting those ‘Smore’ bars on the shelves of the grocery store, so we decided to give them a try, at home.

No Bake S’more Crunch Bars

  • 5 1/2 cups of mini marshmallows
  • 8 cups cinnamon square cereal
  • 1 tablespoon butter
  • 1/2 cup chocolate chunks

Microwave the marshmallows and butter for forty seconds, continuing at ten second intervals until the marshmallows have been completely melted. Add in half off the cereal to the marshmallow mixture, and mix. Add in the second half. For the second half, it’s easier to turn the mixture on to parchment paper, and use wet hands to combine.

When the marshmallow has cooled a little, and the mixture has been combined, add in the pieces of chocolate chunk. We much prefer the chocolate chunk in recipes like these, because they’re less likely to melt as you’re working with them - compared with chocolate chips.

Use the parchment paper to form the mixture, and press into a square, to your desired thickness. When you’ve finished pressing them into about an 8×8″ square, let set and harden at room temperature, about thirty to forty minutes, or cool in the refrigerator for ten to fifteen minutes.

Cut into squares, to your desired size, and portion with parchment paper in a freezer-ready container to have these easy squares on hand and ready to put inside the lunch box for a delicious treat!
