Chocolate, Salted Caramel Mug Cake

Lori Cooking for Kids

54188950 - homemade chocolate mug cake with icing sugarThere’s something about being able to put together a cup of something delicious, with just a few ingredients. It’s nice to be able to make it with ingredients you’ve got on hand, in thirty seconds, and just a minute for cooking. We love the fact that it’s enough to share (unless you’ve had a particularly rough day) and that you can pair it with the Duchess Provisions salted caramel (the most delicious thing you’ll eat all week).

Ingredients for the Mug Cake for Two

2 tablespoons flour
2 teaspoons of sugar
2 teaspoons unsweetened cocoa powder
1/4 teaspoon baking powder
Pinch salt
2 tablespoons milk
1 tablespoon oil
1 tablespoon chocolate chips

Combine the dry ingredients together: the flour, the sugar, the cocoa powder, the baking powder, and the salt. Next, add in the milk oil and mix. When combined, toss in the spoonful of chocolate chips and microwave for sixty seconds. This should be enough time for the cake to set and still have that delicious, oozy centre. It also means the chocolate chips aren’t going to melt fully, and be delicious, chocolate bits.

Before putting it into the microwave, choose either peanut butter or salted caramel, and put a spoonful of it inside the middle of the cup, pressing it down inside of the cake batter. Do this and you’ll get a delicious surprise in the center of the cake, after it’s been cooked. We also drizzled some of the caramel on top, and it was the perfect, perfect mug cake to share.

Put this mug cake in one of your bigger mugs, it’s a bigger mug cake recipe (and the perfect size for sharing).

Sprinkle some icing sugar, drizzle with more Duchess Provisions salted caramel sauce, and savour every last bite - actually don’t, it’s easy enough that you can make another one if you’re forced to share.
